Slimming World Week 1 Update

I'm more determined than ever to shed this weight and I was incredibly well behaved until Friday! I was staying in my boyfriends for the weekend, I didn't plan my meals which led me to eat absolute crap from Friday night to Sunday night. I was bricking it when I got on the scales in slimming world this week, but thankfully I didn't gain anything.

If I learned anything this week it's definitely to plan my meals far in advance, always make sure the fridge is full of healthy snacks and to remember that I want to lose the weight more than I want that chocolate!! I'm not being too hard on myself that I didn't lose weight on my first week back, the best thing to do is move on and work towards the next week. Not losing weight spurred me on even more to get my ass into gear. Slimming world can be tricky to get your head around, but this week I'm flying it and can't wait to see what I'll lose!

Here's some of my recipes from this week :) Like a lot of people, I get sick of certain meals if I eat them regularly so I like to mix up my options. I got so many ideas from group and tried some this week.

Superspeed Tomato Soup

This soup is really tasty and full of speed foods that will guarantee you to lose a few pounds. One week I ate this every day for either lunch or dinner and I lost 7 pound!!

Put 2 tins of chopped tomatoes, 2 tins of beans and 5 chopped up carrots into a pot. An an onion, two garlic cloves and vegetable stock mixed in 1 pint of boiling water. Add pepper, oregano, salt and spinach. Boil it and then leave it to cook for about 30 minutes. Once it has cooled down, blend it and you have four servings of yummy tomato soup. It is completely syn free so you can eat as much of it as you like.

Overnight Oats

I had this breakfast for the first time this morning and I felt so satisfied. I swear I think I would choose this over a fry up, I never thought I would say that!! 

You need 30g of porridge oats (HEB), yoghurt (I use the vanilla Muller Light) and berries (strawberries, rasperries and blueberries). Layer the ingredients so that everything is dispersed evenly throughout the container. Leave in the fridge overnight. In the morning mix all of the layers together. It is a gorgeous breakfast as the berries go sweeter over night and the porridge oats go really fluffy, YUMMMM!! I got my container in Ikea for only €1.

Breakfast Muffins

I had made these breakfast muffins before and I love them. They are so handy if you want a quick snack, they stop me picking at biscuits!! I hate mushrooms and spinach, but you can hardly taste them in the muffins so give them a try!

Dice up 200g of mushrooms and 8 slices of bacon, fry these on the pan using Fry Light. Beat 5 eggs and mix it with chopped up spinach. Preheat the oven to 180 degrees. Add the mixture to fairy cake holders and cook for 30 minutes until they have risen and look golden brown.

Mince and Rice

This is one of my favourite dinners and the easiest way to incorporate speed into your meals. It is so tasty and really fills you up. . Add carrots, one onion, and one clove of garlic. Cook the veg for about 5 minutes. Then add the mince (95% fat free), tomato puree and a vegetable stock cube. Make sure to brown the mince thoroughly, then reduce the heat and allow the mince to thicken (20 minutes). You can eat this with rice or pasta.

All of the above meal ideas are completely Syn free so you can enjoy these without feeling guilty at all! I will update you next week and will hopefully have lots more recipes for you.
